Different 'races' of humans in real life have different body types. Some are naturally smaller, or naturally bulkier, or taller. It may be a genetic thing.

Possibly the afore mentioned 'high quantities of mana in their blood' uses the energy stored in food, thus making the elves thin and slender.

If the elfs are good guys, maybe they want everything and everyone in the world to live in plenty, so they eat as little as they can so others always have enough food.
